We tap the trees in early spring when the days are warm and the nights are still freezing. Then we gather the sap after it has run into the buckets and bring it to the sugarhouse. The sap is the boiled for many hours. It takes 40 gallons of sap to make 1 gallon of maple syrup. We filter, seal and bottle the maple syrup while it is still hot.
